Ingredients

  • 2 gluten-free pie crusts (thawed)

  • 2 large shallots (or 1 medium yellow onion)

  • 1 package bacon

  • 1 package Canadian bacon (optional)

  • 4 green onions

  • 1 package Violife dairy-free shredded mozzarella

  • 8-10 eggs

  • 1 cup canned coconut milk

  • 1 teaspoon pink salt

  • 1/2 teaspoon paprika

  • 1/4 teaspoon nutmeg

  • 1/4 teaspoon cayenne

Directions

  • Preheat oven to 400 degrees. Pre-bake empty crusts for 10 minutes. Remove crusts from oven and change oven temperature to 325 degrees.
  • Dice bacon, Canadian bacon and onion. Thinly slice green onions.
  • Pan fry bacon until crispy. Drain bacon fat except for 1 tablespoon.
  • Saute shallots or onion in bacon fat until translucent.
  • In the pre-baked crust, layer ingredients:
    – shallots/onion
    – bacon and Canadian bacon
    – green onions
    – Violife cheese
    – bacon and Canadian bacon
    – green onions
  • In a separate bowl, whisk together eggs, coconut milk and spices
  • Pour egg mixture into crusts until it reaches near the top of the crust.
  • Bake for 40 minutes or until center has just set. Enjoy!
