Gluten-free & Dairy-free Quiche Lorraine

2 gluten-free pie crusts (thawed)
2 large shallots (or 1 medium yellow onion)
1 package bacon
1 package Canadian bacon (optional)
4 green onions
1 package Violife dairy-free shredded mozzarella
8-10 eggs
1 cup canned coconut milk
1 teaspoon pink salt
1/2 teaspoon paprika
1/4 teaspoon nutmeg
1/4 teaspoon cayenne
Directions
- Preheat oven to 400 degrees. Pre-bake empty crusts for 10 minutes. Remove crusts from oven and change oven temperature to 325 degrees.
- Dice bacon, Canadian bacon and onion. Thinly slice green onions.
- Pan fry bacon until crispy. Drain bacon fat except for 1 tablespoon.
- Saute shallots or onion in bacon fat until translucent.
- In the pre-baked crust, layer ingredients:
– shallots/onion
– bacon and Canadian bacon
– green onions
– Violife cheese
– bacon and Canadian bacon
– green onions - In a separate bowl, whisk together eggs, coconut milk and spices
- Pour egg mixture into crusts until it reaches near the top of the crust.
- Bake for 40 minutes or until center has just set. Enjoy!
I’d like to try this recipe. I don’t typically eat quiche because it’s usually made with wheat and dairy. So it’s great to find this variation.
I’m curious if the canned coconut milk is lite or full fat coconut milk. In the video, it appeared to be lite. Could So Delicious unsweetened plain coconut milk also be used?
