Ingredients

  • 2 medium persimmons, cubed

  • 2-3 apples, cubed

  • 1 tablespoon arrowroot powder

  • 1 teaspoon lemon juice

  • 1 teaspoon cinnamon

  • 1/2 teaspoon nutmeg

  • 1/4 teaspoon cloves

  • Topping
  • 1/2 cup unsweetened shredded coconut

  • 1/2 cup cassava flour

  • 1/4 cup arrowroot powder

  • 1/4 teaspoon salt

  • 2 teaspoon cinnamon

  • 1/2 cup coconut oil, melted

  • 1/4 cup maple syrup

Directions

  • Preheat oven to 350. Chop persimmons and apples into bite sized pieces and place in a medium bowl.
  • Mix in lemon juice, arrowroot, and spices. Pour into a glass baking pan.
  • In a small bowl, mix all topping ingredients. Spread evenly on top of the filling.
  • Bake for 45 minutes until topping is golden brown.
